    Baked Mushrooms Risotto with Cheese

    An easy-to-make first course. An exquisite recipe, racy and appetizing, to be prepared on any occasion, which will surely conquer everyone.

    SERVE 4 people      TOTAL   TIME 30 minutes        DIFFICULTY:  easy

     INGREDIENTS:

    350 gr. Carnaroli rice

    140 gr. tasty cheese

    420 gr. mixed mushrooms (I used frozen ones)

    1 garlic clove

    q.b. fresh parsley, chopped

    q.b. breadcrumbs

    butter, a walnut

    4 tablespoon oil

    DIRECTIONS:

    • Chop the mushrooms (you can also do it from frozen).

    • Heat the oil in a saucepan over medium heat with the garlic, add the mushrooms and cook for 20 minutes or until soft over low heat, stirring occasionally. Adjust lightly with salt.

    • Cook the rice in plenty of salted water for 15/16 minutes (⅔ minutes less than indicated).

    • Meanwhile, preheat the oven to 220 degrees. Grease a baking pan with butter and sprinkle with breadcrumbs.

    • Slice the cheese thinly.

    • Drain the rice and pass it in the pan with the mushrooms, add the chopped parsley and pour a state of rice into the pan, followed by the cheese.

    • Cover with the remaining rice and cheese.

    • Bake for 5/10 minutes until the cheese has melted.

    • Serve immediately.
