SERVES 4 persons READY in 30 minutes DIFFICULTY super easy
INGREDIENTS:
200 g sliced smoked salmon
20 cherry tomatoes
160 g of mixed salad (I used kind oak salad)
4 fresh eggs
1 medium cabbage
2 cucumbers
FOR THE SAUCE:
extra virgin olive oil
untreated lemon juice
salt
DIRECTIONS:

Cut the cauliflower florets, wash them and blanch them in salted water for a few minutes until they are tender but crispy.

Put the eggs in a pan, cover them with water and cook them for 5 minutes from the start of the boil. Once cooked, drain and let cool. shell them

Wash the cherry tomatoes, cut them in two. Peel the cucumbers and slice them finely.

Peel and wash the salad. Dry it carefully then chop everything with your hands and set aside.

Prepare the sauce by emulsifying the oil, the lemon juice (I suggest you add some at a time) and the salt together.

Arrange the salad directly on the plate: put the mixed salad, the cherry tomatoes, the cabbage, the cucumber, the eggs and finally the slices of salmon.

Season everything with the sauce.
