SERVES 4 TOTAL TIME 20 minutes DIFFICULTY easy
INGREDIENTS:
700 gr. Chicken breast fillets
6 juniper berries
1 unwaxed orange
1 little glass of Rum
30 gr. unsalted butter
flour
pepper
salt
DIRECTIONS:

Halve the chicken fillets and place them between two sheets of parchment paper and gently pound to an even thickness. Coat them with flour.

Crush juniper berries and toast them in a non-stick skillet with butter and some finely sliced orange zest over a low medium heat.

Add the chicken and cook until gently brown on both sides, then pour into the Rum and orange juice, loosening with some warm water, if needed.

Season with salt and pepper and cook for further 6/8 minutes.

Serve with some finely sliced orange zest on top.
