Furthermore, this fruit loaf is free of butter and I used oil as the fat part. You won't even feel guilty after eating it!

Ingredients
My favorite about this Fruits Loaf with Walnuts and Almonds is the fact that it’s most made with ingredients that are in our kitchens.
- Dehydrated fruit: I used Goji Berries, Blueberries, Cranberries, Apricots, Plums, and Pears but choose whatever fruit you want.
- Walnuts: Pecans
- Almonds: peeled
- Flour: 00 flour
- Baking powder
- Sugar: granulated but I also do it with fine cane sugar
- Honey: I prefer to put less sugar and add a little Acacia honey
- Eggs: 3 eggs at room temperature
- Oil: I replace the butter with sunflower oil
- Milk: I used whole milk, but you can replace with Almond milk
Instructions
Preheat the oven to 180 degrees.
Grease and lightly flour, or line with parchment paper, a 30x11cm loaf pan.
Sift the flour and yeast into a bowl.
Coarsely chop the walnuts and almonds. Cut the dehydrated fruit into small pieces.
In a large bowl or planetary mixer, beat the eggs with the sugar with an electric whisk until the mixture is light and fluffy. Still with the whips in action, add the oil and the sifted flour a little at a time, alternating them with the milk and so on until exhausted.
Add the walnuts, the chopped almonds and the fruit mixed gently with a spatula. Pour everything into the pan and level.
Cook the plum cake for 40 minutes or until the appetizer comes out completely dry. Let it cool in the mold for a few minutes before transferring it to a wire rack to cool completely.
Expert Tips
Do you want to serve the cake as a dessert? Sprinkle it with cream, caramel and lots of walnuts and almonds!
If you decide to garnish your dessert with whipped cream, keep it in the refrigerator for no more than ⅔ days.

Dried Fruits Loaf with Walnuts and Almonds
Ingredients
- 300 gr. flour
- 100 gr. caster sugar
- 40 gr. honey
- 3 egg
- 100 ml. milk
- 1 sachet baking powder
- 100 ml. sunflower oil
- 50 g walnuts
- 50 g almonds
- 150 gr dried fruits figs, apricots, cranberries, plums, cherries
Instructions
- Pre-heat the oven at 180°C.
- Grease and flour lightly, or lined with parchment paper, a 30x11cm plumcake mold.
- Sift flour and baking powder in a bowl. Roughly chop the walnuts and almonds. Cut the dehydrated fruit into small pieces.
- In a large bowl or in a planetary mixer, beat the eggs with the sugar whisk until the mixture is clear and frothy.
- Always with the whisk in action, add the oil and a little at a time the sieved flour alternating with the milk and so on until exhaustion.
- Add the walnuts, the chopped almonds and the dried fruit and mix gently with a spatula.
- Pour the mixture into the plumcake mold and level the surface.
- Bake the plumcake for 40 minutes or until the wooden skewer comes out completely dry.
- Let cool in the mold for a few minutes before transferring it to a grate to cool completely.
