Ingredients
- Farro: is a type of ancient wheat that’s very popular in Italy. It’s healthy, rich in flavor and it’s very versatile.
- Melon & Strawberries: it will taste best if you choose fresh and in-season fruits.
-Lettuce : you could use any lettuce
- Vinaigrette: adding fresh mint leaves takes this Spelled Melon Salad to the next level, so don’t skip it!
Instructions
Bring salted water to a boil and cook the farro, once cooked, let it cool.
Prep all salad ingredients and add to a large mixing bowl together with cold farro.
Dress with the yogurt emulsion and serve.
Substitutions & Variations
- Barley - instead of Farro, you can use Barley
- Feta - it can be replaced with mozzarella, naturally in taste it will change.
- Vegetarian - Choose vegan feta to make this vegetarian.
- Dairy-Free - for a dairy-free version of this salad, simply eliminate the cheese. and choose a lactose-free yogurt

There are various types of spelled:
Perlato Farro: the most common type. The bran is removed, does not need to soak and cooks for about 20 minutes
Whole Spelled: This type is more nutritious as it retains the bran that surrounds it. It needs a 12-hour soak.

Storage
You can store the salad without dressing in a closed airtight container in the refrigerator for 2-3 days but it tastes best when eaten the same day it's made.

A melon baller is optional, feel free to cut the melon into cubes instead.

Italian Farro Salad with Melon and Brie
Ingredients
- 200 gr farro
- 1 netted melon
- 200 gr strawberries
- 200 gr feta
- 100 gr of salad
For the Sauce:
- 4 tablespoons of yogurt
- 3 tablespoons of extra virgin olive oil
- untreated lemon juice to taste
- ⅚ mint leaves
- salt
Instructions
- Bring salted water to a boil and cook the farro for the time indicated on the package. Once cooked, let it cool.With a Parisienne scoop carve balls out of melon.Cut the feta into cubes and set aside.
- Wash and dry the strawberries, cut them in two or four according to the size.
- Clean and wash the salad, dry it thoroughly and set aside.
- Finely chop the mint. In a small bowl, prepare an emulsion with yogurt, oil, mint and a few drops of lemon. Season with salt if necessary.
- In a salad bowl, combine the salad, the chopped melon, the strawberries, the pieces of feta cheese and farro. Dress with the yogurt emulsion and serve.
