SERVES 4 COOKS in 30 minutes DIFFICULTY not too tricky
INGREDIENTS:
350 gr. maltagliati
300 gr. savoy cabbage
2 potatoes
60 gr. bacon, in cubes
40 gr. Parmesan
20 gr. pine nuts
extra virgin olive oil
salt
DIRECTIONS:
Clean the cabbage by removing the core and the outer leaves. Wash the leaves and cut them into not too thin strips. Peel and dice the potatoes.
Heat a round of oil in a large saucepan, add the potato cubes and cook for a few minutes. When the potatoes have softened, pour the savoy cabbage. Salt lightly and add a little pasta cooking water. Cover and simmer on medium low heat for about 15 minutes or until the vegetables are tender.
In another pan, fry the bacon with very little oil. You will add it to the vegetables once cooked.
In a saucepan without seasoning, toast the pine nuts and keep them aside.
In the meantime, cook the pasta in abundant salted water. Drain it al dente, reserving a little cooking water, transfer it with the vegetables and bacon, add the Parmesan and sauté a minute on the heat, adding a little cooking water if necessary.
Complete with toasted pine nuts and serve.
