Baked Salmon with Mediterranean Flavors
Mediterranean Salmon with cherry tomatoes, olives and capers, is a perfect summer main course simple and delicious.
Servings: 4 people
Ingredients
- 1 kg. salmon fillets skin on
- 500 gr. cherry tomatoes
- 15 black olives (Taggiasche) stoned
- 1 spring fresh thyme
- 1 tbsp. salted capers
- 1 garlic clove
- 4 tbsp. extra virgin olive oil
- salt, pepper to taste
Instructions
- Remove the scales from the salmon, wash it under running water and dry the surface with kitchen paper.
- Quartered the cherry tomatoes. Wash the capers under running water.
- Preheat oven to 180°.
- Cook the fillets skin side down in a hot frying pan for a few minutes.
- In another pan heat 4 tablespoons of extra virgin olive oil with the peeled garlic clove, the add the quartered tomatoes together with the fresh thyme. Season with a twist of salt and pepper.
- In a large baking tin, lay down 2 sheets of aluminium foil, large enough to wrap up the fillets.
- Arrange the fillets, skin side down, then add the tomatoes with their sauce, the sliced olives and the unsalted capers.
- Close well the foils over the fillets to make a parcel, making sure to seal the edges well.
- Bake the salmon fillets for 20 minutes.
- Remove the parcel before serving.
- Enjoy your salmon with a side of potatoes or a salad!
