The delicate flavor of salmon is enriched by the crunchiness of almonds. A light and appetizing dish that I love! The salmon is sprinkled with a mix of almonds and lemon and cooked in the oven. Savor it with a side dish of zucchini!

SERVES 4 TOTAL TIME 50 minutes DIFFICULTY easy
INGREDIENTS:
1 salmon fillet, of about 1,5 kg, cleaned
1 lemon zest
80 gr almond
30 gr. unsalted butter, softened
1 sprig of fresh parsley, chopped
30 gr. Parmesan cheese
1 garlic clove
100 ml. dry white wine
extra virgin olive oil
salt, pepper
DIRECTIONS:

Wash the salmon under running water and dry it with kitchen paper. With a kitchen tongs remove any pins.

Preheat oven to 200°.

Chop the almonds and mix them with the softened butter, the grated lemon zest, the parsley and the Parmesan.

Season with a twist of salt and pepper.

Arrange the salmon on a baking tray where you have fried the oil with the garlic, salt and pepper slightly and finally, stuff it with ¾ of the almond mixture.

Sprinkle with the wine and cook in the oven for about 30 minutes.

Spread the remaining almond mixture on top just before serving the sliced salmon.

Enjoy your salmon with a side of courgettes!
