The pasta shown few vegetables and a few basil leaves on top\" data-skip-lazy class=\"wp-image-315\" srcset=\"https:\/\/pastafantasy.com\/wp-content\/uploads\/2019\/06\/Eggplants-Pasta-Salad.jpg 1200w, https:\/\/pastafantasy.com\/wp-content\/uploads\/2019\/06\/Eggplants-Pasta-Salad-360x300.jpg 360w, https:\/\/pastafantasy.com\/wp-content\/uploads\/2019\/06\/Eggplants-Pasta-Salad-768x640.jpg 768w, https:\/\/pastafantasy.com\/wp-content\/uploads\/2019\/06\/Eggplants-Pasta-Salad-720x600.jpg 720w, https:\/\/pastafantasy.com\/wp-content\/uploads\/2019\/06\/Eggplants-Pasta-Salad-180x150.jpg 180w\" sizes=\"(max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<p>Flavorful Pasta Salad with eggplant and Greek Cheese dressing is one of our summer favorites! <\/p>\n\n\n\n<p>Serve it warm or chilled<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><strong><em>SERVES <\/em><\/strong><em>&nbsp;4 &nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;<\/em><strong><em>TOTAL TIME<\/em><\/strong><em> 30 minutes &nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;<\/em><strong><em>DIFFICULTY<\/em><\/strong> not too tricky<\/p>\n\n\n\n<p>&nbsp;<\/p>\n\n\n\n<p><strong><em>INGREDIENTS:<\/em><\/strong><\/p>\n\n\n\n<p><em>350g Mezze Penne<\/em><\/p>\n\n\n\n<p><em>1 Eggplant <\/em><\/p>\n\n\n\n<p><em>A Dozen (roughly) of Cherry Tomatoes<\/em><\/p>\n\n\n\n<p><em>2 tablespoon of Oil<\/em><\/p>\n\n\n\n<p><em>1 Red Chilli<\/em><\/p>\n\n\n\n<p><em>100g of Greek Cheese <\/em><\/p>\n\n\n\n<p><em>\u2158 Basil leaves<\/em><\/p>\n\n\n\n<p><em>1 garlic<\/em><\/p>\n\n\n\n<p><em>Walnuts<\/em><\/p>\n\n\n\n<p>&nbsp;<\/p>\n\n\n\n<p><strong><em>DIRECTIONS:<\/em><\/strong><\/p>\n\n\n\n<p>&nbsp;<\/p>\n\n\n\n<ul><li> <p class=\"\">Cut eggplant lengthways and then in cubes.<\/p> <\/li><li> <p class=\"\">Then heat up 3 tablespoons of oil, add in the garlic peeled and fry it while making sure you\u2019re not letting it burn.<\/p> <\/li><li> <p class=\"\">Add in eggplant  and while mixing let them cook until tender, if necessary add some water.<\/p> <\/li><li> <p class=\"\">In the meantime, cook the pasta in a big pot of boiling and salted water.<\/p> <\/li><li> <p class=\"\">Cut the tomatoes in half, the Greek cheese in cubes and pour them in a bowl where you\u2019re going to later add in the other ingredients.<\/p> <\/li><li> <p class=\"\">Add in the basil roughly cut.<\/p> <\/li><li> <p class=\"\">Drain the pasta, let it cool down by passing it under cold running water and then add it in with the sauce.<\/p> <\/li><li> <p class=\"\">Roughly cut the walnuts as well and add them in the bowl and add the pasta with the sauce as well.<\/p> <\/li><li> <p class=\"\">Mix everything together so that the tomatoes and Greek cheese combine properly with the sauce.<\/p> <\/li><\/ul>\n\n\n\n<p>Enjoy you\u2019re cold Pasta!
