Season the chicken slices with salt, pepper and cook them on the hot grill on both sides. Remove the chicken on a cutting board, cut it into strips and let it cool.
Peel the cucumber and slice it finely with a mandolin lengthwise.
Wash and peel the orange, leaving a few slices with the peel for the garnish, slice it to your liking.
Wash the cherry tomatoes and cut them into 2 or 4 according to the size.
Clean and wash the salad under running water and dry it thoroughly.
Prepare the sauce by emulsifying the oil, salt and pepper together.
Arrange the salad in a large bowl or directly on individual plates, add the cherry tomatoes, the rolled cucumber. Complete with the orange and chicken.
Dress with the oil emulsion and serve.
