Ingredients

  • 800 gr. quality pork loin
  • 1 lt. whole milk
  • 4 tablespoon extra virgin olive oil
  • salt and pepper to taste

Instructions

  • Heat 4 tablespoons of oil in a large saucepan over medium heat, add the pork and brown it so that it takes on a nice golden color. Do the same on all sides, turning the meat with the help of two spoons. This operation allows the meat to seal itself by keeping all the sauces inside.
  • Season lightly with salt and pepper.
  • Reduce the heat, slowly pour the milk into the pan and bring it to the boil gently. Cover and cook over low heat for 90 minutes, checking the meat occasionally. If you use a pressure cooker, 40 minutes will be enought. If you have a kitchen thermometer, check the cooking: make sure that the temperature in the center is 70 °.
  • Transfer the pork to a cutting board and slice it. Arrange the slices on a hot plate, cover with the sauce and serve.
  • If the sauce is too liquid, let it simmer until it thickens. If you prefer a smoother sauce, pass it with an immersion blender.
  • You can accompany the pork with roasted potatoes, a puree or simply with a salad.
