Bruschetta with Mortadella and Zucchini Cream

This bruschetta with mortadella and zucchini cream combined with pistachios will captivate you with their flavour! They are delicious, tasty and, of course, very easy to make.

Ingredients

  • 4 slices of homemade bread
  • 60 g Philadelphia type cream cheese
  • 1 zucchini
  • 4 thin slices of mortadella
  • 1 small garlic clove
  • pistachios to taste
  • oil
  • salt and pepper

Instructions

  • Wash and cut the ends of the zucchini. Grate it with a large hole grater.
  • Transfer the zucchini pulp to a mixer and add the cheese, the garlic clove, the olive oil, ⅚ pistachios and a pinch of salt. Run the mixer and mix everything together until you get a smooth cream.
  • In the meantime, slice the homemade bread into slices about 1.5 cm thick.
  • Put them to toast on both sides on the grill for a few minutes.
  • At this point, make the bruschetta: spread the zucchini and cheese cream on the bread and place a slice of mortadella on each bruschetta.
  • Complete with a few pistachio flakes and a pinch of pepper.
  • Your Mortadella and Zucchini Bruschetta are ready.
