Baked Salmon with Mediterranean Flavors

Mediterranean Salmon with cherry tomatoes, olives and capers, is a perfect summer main course simple and delicious.

Ingredients

  • 1 kg. salmon fillets skin on
  • 500 gr. cherry tomatoes
  • 15 black olives (Taggiasche) stoned
  • 1 spring fresh thyme
  • 1 tbsp. salted capers
  • 1 garlic clove
  • 4 tbsp. extra virgin olive oil
  • salt, pepper to taste

Instructions

  • Remove the scales from the salmon, wash it under running water and dry the surface with kitchen paper.
  • Quartered the cherry tomatoes. Wash the capers under running water.
  • Preheat oven to 180°.
  • Cook the fillets skin side down in a hot frying pan for a few minutes.
  • In another pan heat 4 tablespoons of extra virgin olive oil with the peeled garlic clove, the add the quartered tomatoes together with the fresh thyme.  Season with a twist of salt and pepper.
  • In a large baking tin, lay down 2 sheets of aluminium foil, large enough to wrap up the fillets.
  • Arrange the fillets, skin side down, then add the tomatoes with their sauce, the sliced olives and the unsalted capers.
  • Close well the foils over the fillets to make a parcel, making sure to seal the edges well.
  • Bake the salmon fillets for 20 minutes.
  • Remove the parcel before serving.
  • Enjoy your salmon with a side of potatoes or a salad!
