SERVES 4 persons READY in 10 minutes DIFFICULTY easy
INGREDIENTS:
1 clove of garlic
30 gr of fresh basil leaves washed, drained
35 gr pine nuts
110 gr. extra virgin olive oil
40 gr. Parmesan cheese + 20 gr. Pecorino cheese (if you prefer you can do 60 gr. Parmesan)
DIRECTIONS:
In the bowl of a food processor, pulse the basil leaves
Add the pine nuts, the Parmesan cheese and the peeled garlic and pulse until finely chopped.
With the food processor still functioning, combine the extra virgin olive oil, adding a splash of water to loosen, if you like your sauce a little runnier. Continue bashing and pounding until smooth.
Drizzle in some more oil if needed – you need just enough to bind the sauce and get it to an oozy consistency.
