SERVES 4 TOTAL TIME 30 minutes DIFFICULTY easy
INGREDIENTS:
600 gr. Chicken breast fillets
80 gr. Mushrooms (frozen go as well)
50 gr. leek
3 tablespoon extra virgin olive oil
salt and pepper to taste
DIRECTIONS:

Slice the chicken lengthways 2 cm thick slices, then cut into 2 cm pieces. Cut and discard the green part of the leek, then finely slice the white ones.

Heat 3 tablespoons of extra virgin olive oil in a non-stick frying pan, tip into the leek and let it sweat for a few minutes, loosening with some warm water.

Add the chicken pieces spreaded into a single flat layer. Let it fry 4-5 minutes over a medium heat, then flip the pieces over and fry for a further 4 minutes.

Pour into the roughly chopped mushrooms and mix everything well together to allow the flavor to combine. Season with salt and black pepper.

Cover with a lid and cook for 10/15 more minutes over a low-medium heat stirring and loosening with some warm water, if needed. Uncover, move the pan to a high heat until the liquid evaporates and thickens.
