SERVES 4 persons READY in 15 minutes DIFFICULTY easy
INGREDIENTS:
350 gr Linguine pasta
1 clove of garlic
30 gr. of fresh basil leaves washed, drained
35 gr pine nuts
110 gr. extra virgin olive oil
40 gr Parmesan cheese + 20 gr. Pecorino cheese
DIRECTIONS:

Put into a food processor the basil leaves and chop finely.

Add the pine nuts, the Parmesan cheese and the peeled garlic and pulse until finely chopped.

With the food processor still functioning, combine the extra virgin olive oil, adding a splash of water to loosen, if you like your sauce a little runnier. Continue bashing and pounding until smooth.

Drizzle in some more oil if needed – you need just enough to bind the sauce and get it to an oozy consistency.

Meanwhile, bring a pan full of salted water to boil, and when it has reached the desired temperature, add in the pasta for the minutes indicated in the packaging.

Drain the pasta and put it back to the empty pan. Pour the sauce and mix it well.
