    Rabbit in Aromatic Breadcrumbs

    SERVES  4        TOTAL TIME 50 minutes          DIFFICULTY not too tricky

     

    INGREDIENTS:

    1 kg. wild rabbit

    aromatic herbs (fresh thyme, marjoram, parsley and rosemary)

    mustard

    8 tbsp. breadcrumbs

    1 large garlic clove

    4 tbsp. extra virgin olive oil

    salt

     

    DIRECTIONS:

    • Preheat the oven to 190° C.

    • Wash the rabbit under running water and dry the surface with kitchen paper.

    • Heat the oil in a baking pan, tip into the pieces of rabbit and fry them on both sides, for about 10 minutes.

    • Meanwhile, prepare the crumb. Mince finely all herbs together with garlic, then stir them into the breadcrumbs. Mix well everything together.

    • Take the rabbit off, draining well, season with salt and spread all pieces with a thin layer of mustard. Roll them in the breadcrumb mixture.

    • Tip the rabbit into the baking pan and put into the oven for about 40 minutes.

    • Serve the rabbit warm and crispy.
