INGREDIENTS:
1 kg. wild rabbit
aromatic herbs (fresh thyme, marjoram, parsley and rosemary)
mustard
8 tbsp. breadcrumbs
1 large garlic clove
4 tbsp. extra virgin olive oil
salt
DIRECTIONS:

Preheat the oven to 190° C.

Wash the rabbit under running water and dry the surface with kitchen paper.

Heat the oil in a baking pan, tip into the pieces of rabbit and fry them on both sides, for about 10 minutes.

Meanwhile, prepare the crumb. Mince finely all herbs together with garlic, then stir them into the breadcrumbs. Mix well everything together.

Take the rabbit off, draining well, season with salt and spread all pieces with a thin layer of mustard. Roll them in the breadcrumb mixture.

Tip the rabbit into the baking pan and put into the oven for about 40 minutes.

Serve the rabbit warm and crispy.
