SERVES 4 TOTAL TIME 20 minutes DIFFICULTY easy
INGREDIENTS:
400 gr. fresh egg Tagliatelle
300 gr. prawns, cooked and peeled
4 fresh zucchini
fresh mint leaves
1 garlic clove
5 tablespoon of extra virgin olive oil
pepper
salt
DIRECTIONS:

Bring to a boil a large saucepan of salted water.

Trim and cut into fine slices the zucchini.

Heat 5 tablespoons of extra virgin olive oil in a large frying pan over a medium heat, then add the garlic and fry until golden.

Tip into the sliced zucchini and cook for about 5 minutes, stirring occasionally with a wooden spoon. Add the drained shrimps, the mint and continue to cook for further 5 minutes, seasoning with salt and pepper.

Meanwhile, cook the pasta until al dente.

Drain it, reserving some cooking water, then tip into the saucepan with the zucchini and gently toss everything together for 30 seconds, loosening with some cooking water.

Serve immediately garnished with some fresh mint leaves.
