SERVES 4 TOTAL TIME 40 minutes DIFFICULTY easy
INGREDIENTS:
8 slices of Turkey meat
100 gr. Gorgonzola cheese
140 gr. Pancetta in slices (you can use bacon instead)
½ glass of dried white win
extra virgin olive oil
sea coarse salt
salt and pepper to taste
DIRECTIONS:

Place the turkey slices on a board and bosh with a rolling pin until thin.

Season with salt and pepper. Put some Gorgonzola cheese in each slice, then tightly roll up (Fig. 1, 2, 3, 4).

Lay 3 slices of pancetta on the board, arrange one involtino and roll up, then repeat the rolling motion orizontally, this time with only one slice of pancetta (Fig. 5, 6, 7, 8).

Secure the involtino with kitchen string (fig. 9).

Heat 3 tablespoons of virgin oil in a large pan (to fit all the involtini) over a medium-high heat and fry the involtini (fig. 10).

Brown them on all sides, then pour into the wine and let the alcohol bubble away. Add some hot water or broth, lower the heat and cook for about 20 minutes covered.

Once they are cooked, highten the heat for a couple of minutes in order to have a thick sauce.
