What makes this recipe great
It is a muffin recipe that is very simple to make and requires a few ingredients that, for sure, you will already have at home.
Ingredients
- Flour: all-purpose flour is great for cookies
- Coconut:
- eggs: choose fresh eggs
- Cream: make sure to use fresh cream
- Sugar: white sugar or cane sugar are great
Instructions
Preheat the oven to 200°
Grease the muffin tins, or put a paper muffin case into each hole.
Sift the flour, with the baking powder and salt. In a bowl, combine the flour and coconut.
In a bowl, beat the egg and sugar until it becomes frothy, then add the cream. Add the flour a little at a time, always stirring until it is well combined.
Pour the mixture into the previously prepared tins, filling each hole by ¾ and
sprinkle them with coconut.
Bake for 20 minutes or until golden brown. Let them cool for a few minutes, then place them on a wire rack to cool completely.
Expert tips
Take the eggs out of the fridge at least 30 minutes beforehand.
They can also be frozen: put them in a bag and then freeze for up to 3 months. You can heat them in the microwave when you're ready to eat them or thaw them at room temperature.

- 150 gr. sugar

- a pinch salt
- coconut for the cover
