Instructions
Start preparing your ingredients. Halve the peppers, deseed and slice them length-ways into strips, then into 3 cm pieces. Finely chop the onion (Fig. 1, 2).
Heat 2 tablespoons of extra virgin olive oil into a non-stick pan over a medium heat, then add the onion and fry until golden, adding some water if needed (Fig. 3).
Put the sugar and lemon juice in a large pot (the best option is an earthenware pot) over a low heat until the sugar is dissolved.
Add the peppers and the onion (Fig. 4). Mix well and let the jam bubble away, stirring with a wooden spoon (Fig.5). Cook until the peppers become tender then blend them with an immersion blender and return to the heat (Fig. 6). Simmer until the jam is firm and skinny. Test it with a saucer, if the jam slides slowly, it is ready, otherwise return it to the heat.
Ladle jam into sterile jars, filling to within 1 cm of the tops. Cover with flat lids and screw well.
Flip the jars and let to cool.
Your jam is ready!

- 300 caster sugar
- 1 lemon juice
- 2 medium onions
- 2 tbsp. extra virgin olive oil
