    What makes this recipe great

It is a biscuit recipe that is very simple to make and requires a few ingredients that, for sure, you will already have at home.

    Ingredients

    • Flour: all-purpose flour is great for cookies
    • Unsalted Butter: at room temperature
    • Chocolate chip: all kind of chocolate chips works well in the cookies
    • Vanilla: make sure to use pure vanilla paste or extract
    • Sugar: white sugar or cane sugar are great

    Instructions

In a bowl of a standing mixer, place the butter and sugar and mix until light and fluffy.

Add the eggs and vanilla, mix slowly. Using a wooden spoon or a spatula, stir the flour mixure into the butter mixture. stir until well combined, but try to not overmix.

Lastly, fold in the chopped chocolate.

Cover the dough with some kitchen wrap and let it rest in the fridge for minimum 2 hours (overnight would e better!).

Preheat the oven to 180°C. Line 2 baking sheets with parchment paper.

Using a cookie scoop or an ice cream spoon, scoop the cookie dough and arrange on baking trays, leaving about 5 cm between each.

Bake one trail at time for about 14 minutes.

The cookies are ready when they are slightly golden around the edges, but very soft and puffy in the middle.

Take them out of the oven, sprinkle with sea salt and leave to cool a few minutes before transferring them to a wire rack to cool completely

    Substitutions & Variations

    • Flour: all-purpose flour can be replaced by gluten-free all-purpose flour.
    • Chocolate Chips -
    • Capers - capers can be replaced with black olives
    • Spicy - add chili pepper flakes or some spicy oil to imbue heat into the dish
    • Dressing - use any other dressing you like.
    • Add - pumpkin seeds, sesame seeds

    Expert tips

Use a Cookie scoop: this helps to drop evenly size dough ball onto the baking sheet.

Flatten cookies: it's important to flat the cookies before baking

    Ingredients: Use room temperature ingredients

Chocolate chips: Use quality chocolate chips

Do not overmix your batter: don't overmix them, or they will become chewy instead of crunchy, this is very important.

Chill the dough: Results are almost always better when you rest the cookie dough in the refrigerator.

Add some chocolate: add some chips on top of the cookies before baking them for an even more chocolaty result!
